Ingredients

3 cups milk substitute
1 1/4 cups sugar

Directions

First make condensed milk by simmering the milk in a pan until it reduced by 60%. Be sure to start out with a large enough amt in the pot so you have at least 1 cup of evaporated milk left at the end.

Next, mix a cup of the evaporated milk with the sugar. Heat until the sugar is completely dissolved. Cool.

It will keep in the refrigerator for several days.

Notes

This process is different from simply mixing a stronger concentration of powdered milk substitute as the heat acts on the milk and later on the sugar to keep the sugar in suspension.

Ingredients

750 ml bottle rum or vodka
2 vanilla beans

Directions

Open the bottle of vodka or rum. Then, working one at a time, using the tip of a sharp paring knife, slice the vanilla beans lengthwise. If desired, scrape the seeds out of the pods. Scraping the seeds will leave little black bits in your vanilla, but it provides better flavor. For clearer vanilla, don’t scrape the seeds. Put both seeds and pods into the vodka or rum. Replace the cover on the bottle. The vanilla will be ready in about 3-4 wks.

OPTIONAL: Take a large pot and fill it with hot tap water. Do not put it on the stove, instead place the vodka or rum bottle in the water, making sure that the bottle is stable and will not fall over (you might need to adjust the water level). Leave the bottle for about an hour.

Remove the bottle from the water. The vanilla will be ready to use in a week or two.

Notes

Substitutions

If you are avoiding corn, wheat or gluten, you should look for a vodka that is potato-based. The majority of your better vodkas that are sold in the US are grain-based and usually corn. Rum is made form sugar cane and is generally safest of all. Use light rum and not an aged, dark rum.

Ingredients

3 Tbsp warm or hot water
1 Tbsp ground flax seed

Directions

Grind flax seed in a coffee grinder (or any other blending machine) until flax is very fine. In a bowl mix 1 tablespoon of flax seed, and 3 tablespoons of warm or hot water. Let sit.

Use as an egg substitute in cookies, cakes, breads or other recipes where the egg acts mainly as a binder.

Notes

Every 1 tablespoon of flax seed and 3 tablespoons of water combined, is equal to 1 egg.

Ingredients

2 cups unflavored rice milk
pinch salt
pepper
2 Tbsp cornstarch or potato starch
2 Tbsp unflavored rice milk

Directions

Bring 2 cups rice milk to boil. Reduce to half volume, add salt and pepper. Mix 2 Tbsp rice milk with starch to make slurry. Add to reduced rice milk, and simmer until slightly thickened.

Use as substitute for dairy cream in sauces.

Notes

You can make this into its own sauce by adding other herbs/spices (ie, minced garlic, Tabasco sauce, sage to the 2 cups rice milk.)

Substitutions

You can use tapioca starch instead of corn/potato, but reduce to 1 Tbsp.

Ingredients

1 banana, chunked
1/2 packet plain gelatin powder
1 tsp hot water

Directions

Mix the gelatin and water together, and beat with a fork.

Pour into blender, and add the banana chunks.

Mix for 4 times the time it takes to mix the banana. Example: if you puree your banana in 10 seconds, leave the mixer on for 40 seconds.

The mixture will be very thick and gluey. Add to your ice cream to thicken it and make it easier to scoop.

Notes

You can use only banana – or only gelatin depending on the final flavor.

Substitutions

Check carefully for the appropriate gelatin for your allergies. Note that standard gelatin is pork or beef derived. Vegan gelatin exists but may contain corn.

Ingredients

2 cups mild flavored vegetable oil
1 cup annatto seeds

Directions

Place the oil in a heavy 2-quart saucepan and heat to about 350 °F. Do not let it overheat and smoke. Add the annatto seeds and remove pan from heat. Allow to cool completely and strain into a glass jar. Store in refrigerator.

Notes

Annatto oil has the bitter flavor and yellowith orange color of saffron, but is much less expensive. Use a couple of tablespoons to either replace or supplement saffron called for in a recipe.

Annatto seeds can be found in Latino or Filipino markets. Try to get in bulk as it’s cheaper than the little bags. I’ve even found them in Asian markets.

Ingredients

3 oz Hersheys® Unsweetened Baking Chocolate
2 Tbsp coconut butter
1/2 tsp vanilla
1 1/2 cups powdered sugar

Directions

Heat chocolate and coconut butter in microwave on medium for 2 minutes. Stir. Heat at medium for 2 more minutes, stir. Add vanilla and powdered sugar until thoroughly mixed. Shape into chocolate chip size balls and freeze for 30 minutes.

Notes

Could also spread onto waxed paper in a thin sheet and freeze, then cut into small pieces.

Substitutions

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy, consult your physician to find out if you need to avoid coconut.
