Ingredients

2-4 Tbsp vegetable oil
2 onions, chopped
2 lb pork, cubed
2-4 tsp chili powder
3 Tbsp honey
2 – 3 lbs sweet potatoes, peeled and cut into 1 inch cubes
1 1/2 cups orange juice
2 15 oz cans black beans, rinsed and drained
2 Tbsp margarine
2 Tbsp flour
1/4 cup fresh cilantro, chopped
salt and pepper

Directions

In large saucepan, saute onions until they are somewhat soft. Add pork cubes and cook on medium high until lightly browned. Add chili powder, honey, salt and pepper. Add sweet potatoes and orange juice. Cover with water.

Simmer until sweet potatoes are soft.

Knead margarine and flour into a small ball. Add black beans and margarine/flour ball. Cook until thickened (a few minutes). Remove from heat, add cilantro.

Season with salt and pepper to taste.

Ingredients

4 med lg vine tomatoes, peeled and seeded
2 1/2 cups cubed seedless watermelon
3 cloves peeled garlic
2/3 Tbsp salt
1 tsp black pepper
3 Tbsp extra virgin olive oil

Directions

Take 4 vine tomatoes and with a small knife cut a little cross on the bottom.

Put the tomatoes in boiling water for 20 seconds.

Remove from the boiling water and place the tomatoes in an ice bath for a couple of minutes.

Peel the tomatoes, cut them in quarters and cut seeds out.

Combine all ingredients and blend in a blender.

Serve in a soup bowl with some fresh basil and a little olive oil.

Or serve to adults as a refreshing drink.

Ingredients

3 Tbsp olive oil
3 Tbsp gluten-free flour
1 cup diced/sliced cremini or white mushrooms
1/4 cup finely diced white onion
1 1/4 cup original or unsweetened milk alternative
1 Tbsp lemon juice or vinegar
1/2 tsp salt
1/4 tsp pepper
pinch dried rosemary
pinch dried oregano
1/4 tsp poultry seasoning or Garlic & Herb Mrs. Dash
3 Tbsp minced fresh parsley (optional)

Directions

In a large saucepan or bistro pan, heat the oil on medium heat. Add the chopped mushrooms and onion and cook for several minutes.

Pour and measure the milk beverage into a measuring cup and add the lemon juice (or vinegar) to it so that it can begin to sour into “buttermilk”. This process takes about 10 minutes, so you do want to do this step early on.

When the mushrooms and onions have softened and reduced in size, add the gluten-free flour to the pan and whisk. The flour will “gum” with the oil/liquid. Allow to cook for a few minutes while you prepare the spices or chop the parsley.

The milk is ready to pour in when there are separated “blobs” in it. Pour the milk in slowly, and continue to whisk. Allow it to slowly come to a boil (still on medium heat) and then reduce the heat to medium-low.

Add the spices (dry and fresh) and continue to simmer until the soup has thickened and reduced.

The final product will fit in a standard mason jar (about 400 mL); which is a little more than one store-bought condensed cream of mushroom can.

Serve the soup to eat right away or use it in another recipe that calls for cream of mushroom soup (casserole, vegetable dishes, etc.).

Substitutions

For milk alternative, I use original So Delicious coconut milk beverage.

Poultry seasoning is just a blend of spices that is pre-mixed for you. You can also make your own using any combination of thyme, parsley, oregano, sage, rosemary, marjoram, celery seed, black pepper. Alternately, you can use a Mrs. Dash blend, if safe for you.

If you don’t want your soup to be really chunky, reduce the amount of mushrooms and onions and use a food processor to chop finely.

Any gluten-free flour should work, I prefer the nuttiness and fullness of garbanzo bean flour for this recipe. You can also use rice flour, sorghum flour, or millet flour.

Ingredients

6 Tbsp bacon grease, oil, margarine, or butter
1/2 cup minced onion
1/2 cup minced celery
4 Tbsp flour or gluten free flour mix
4 cups tomato or V8 juice
to taste salt and pepper

Directions

Sautee the veggies in 2 Tbsp fat of your choice. If using bacon, I fry up diced bacon till crispy and reserve to add back at the end. Don’t brown the veggies. When they are soft, add the rest of the fat and the flour. Stir constantly over med-low heat – you want to get rid of the raw flour taste but not burn it.

Add 1 cup of tomato juice while stirring. This will get rather thick. I do this first bc I find it’s easier to prevent lumps this way. Once everything is smooth, slowly add the rest of the juice. Bring to a boil and the soup will be slightly thick and creamy.

Notes

This is a yummy dairy free version of tomato soup. If you want it completely smooth, you can puree it at the end, but I like the little veggie bits.

I like to dice up bacon and fry it crispy to render the fat. Remove and reserve the crispy bacon. Try to not eat it all while making the rest of the soup. Add the bacon bits back in at the end or sprinkle them on top of each bowl.

Substitutions

If you want it a little less tomatoey – you can sub 1 cup of the juice with chicken or veggie stock.

If you like it chunkier, you can use crushed tomatoes instead of juice. I like using half chicken or veggie stock with half crushed tomatoes.

I’ve done this with an all-purpose gluten free flour mix. I don’t care for using all starch or all rice flour, but a mix works well.

Ingredients

1 lb dried split peas
3 Tbsp safe oil
2 cups carrots (diced)
3 ribs celery (diced)
1 yellow onion (diced)
1 hamsteak (diced) or ham shank with bone
9 cups water

Directions

Rinse, drain and sort peas.

Place oil in a large pot over medium heat. Add carrots, celery and onion. Saute until soft.

Add peas, water and ham to pot. Bring to a boil, lower heat and simmer until peas have become “mush” and liquid is mostly absorbed, about 1 hour. Stir occasionally.

If you used a ham shank, remove it, discard bone, and cut up the meat and add it back to the soup.

Notes

The soup will thicken as it cools. This freezes well.

Substitutions

Hamsteak, pre-diced ham, ham shank, and ham bone all work well. Just check the label carefully for the additives to make sure it is free of your allergens.

You can add safe chicken or beef bouillon to taste.

You can omit any of the vegetables.

Ingredients

For the Meatballs:
1 lb ground beef or lamb
1 tomato
1 onion, grated
For the Soup:
1 pkg flank meat bones
1 sweet potato
2 potatoes
5-6 carrots
2 stalks celery
3-4 zucchini
1 onion

Directions

Dice all the vegetables. Place them and the meat bones in a 10 quart pot. Cover with water. Simmer for 1 1/2 hours.

Grate the onion and tomato over the meat and mix. Roll into small balls, and drop into the soup. Simmer until meatballs are cooked through and you are ready to serve.

Add salt and pepper to taste.

Notes

This recipe is suitable for Passover. Check that the ingredients are okay according to your level of observance.

Ingredients

2 Tbsp vegetable oil
1/2 tsp ground cumin
1/2 cup onion, chopped
1/2 cup green pepper, chopped
3 1/2 cups chicken broth
16 oz salsa
1 cup whole kernel corn
6 corn tortillas
1 Tbsp shredded Mexican cheese (milk or milk-free) (optional)
sour cream (milk or soy based) (optional)

Directions

In medium saucepan, cook green pepper, onion and cumin in one tablespoon of vegetable oil for 4 minutes or until green pepper and onion are tender. Add in chicken broth, salsa and corn. Bring to boil then reduce heat to low. Cook for 5 minutes.

Cut corn tortillas into 1/2-inch strips.

In separate saucepan, heat 1 tablespoon of vegetable oil. Add tortilla strips. Cook for 3 to 4 minutes or until tortilla strips are crisp and golden brown. Place on paper towels to drain.

To serve, place a handful of tortilla strips in bottom of a bowl and top with shredded cheese, if desired. Pour soup over tortilla strips. Add sour cream, if desired.

Notes

Substitutions

Omit cheese and sour cream if avoiding milk, or use milk-free substitutes.

Prepared or homemade stock can be used.

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.

Ingredients

1 stalk lemon grass (see below for alternative)
2 inch piece fresh ginger, sliced
5 cups water
1 lb beef, sliced thin across the grain
1 head garlic, minced
1 lg shallot or small onion
1 tsp turmeric
1 tsp shrimp or anchovy paste (optional)
1 Tbsp soy sauce
1 pkg or can sliced bamboo shoots, rinsed and drained
1 Tbsp tamarind extract (see below for alternatives)
1 bunch green onions, sliced into 1/2 inch pieces
2 tsp salt or to taste
to taste crushed red pepper or chili garlic paste (optional)
lemon wedges (optional)
cilantro, chopped (optional)
2 cups rice, cooked according to pkg directions

Directions

Cut lemon grass into 4 inch lengths. Combine with sliced ginger and water in a small soup pot. Bring to boil, cover and reduce heat, and simmer for 10 minutes.

Add sliced beef, garlic, shallot or onion, turmeric, shrimp or anchovy paste if using, and soy sauce. Add bamboo shoots if using. Cover and simmer until beef is tender, about 15 minutes.

Add tamarind extract and green onion if using and simmer for another 5 minutes.

Remove and discard lemon grass and ginger. If soup is too thick, add more water. Season to taste with salt and red pepper. For a non-spicy soup, the red pepper can be omitted or passed as an addition for each diner to add to taste.

To serve:

Put about 1/2 cup of cooked rice in the bottom of a good sized soup bowl. Ladle soup and meat on top. Garnish with lemon wedges and cilantro if desired.

Notes

This is a yummy soup that is salty and sour and can be made as spicy or mild as you like. It is based on a recipe for a Cambodian soup. With the addition of rice, this is a rich and filling meal.

Substitutions

The lemon grass stalk can be replaced with the yellow peel of 1 lemon. Peel carefully to only get the yellow and not any of the bitter white pith below.

I usually use London Broil for this and slice it thinly across the grain. You want a cut that will cook quickly and be tender.

If avoiding fish and/or shellfish, omit shrimp or anchovy paste. This will not greatly effect the flavor.

I use Tamicon tamarind extract found in Indian, Asian and Latino markets. You can use 4-5 whole tamarind pods, shelled, or the equivalent in processed pulp. Drop into the soup at the same point in the recipe, but remove the hard seeds and fibrous pulp before serving. The tamarind gives the soup its tangy, sour flavor. It can be replaced with the juice of 1 lemon. This will have a slightly different flavor, but is still quite yummy. Tamarind is a legume.

I’m sure the soy sauce could be omitted or replaced with something, but I have not tinkered with that see what would work well. My best suggestion would be a little balsamic vinegar and more salt. If you need to avoid wheat or gluten, there are gluten-free soy or tamari sauces.

Directions

Put water or broth in large soup pot and add celery, carrot, onion powder and Say Cheez seasoning packet.

Bring stock to a boil and add the elbow noodles. Boil for 10-13 minutes until pasta is tender, stirring occasionally. Stir in cooked chicken breast. Season with salt and pepper. Serve hot.

Ingredients

2 15.5 oz cans white beans, rinsed & drained
2 medium carrots, diced
1 small onion
2 cups chicken broth
6 oz bacon, diced
salt and pepper to taste

Directions

Mash one can of beans and set aside. In a large saucepan cook the bacon over medium heat until crisp. Remove the bacon with a slotted spoon and drain. Discard all except 2 tablespoons or so of the grease from the pan. Add the carrots and onion to the pan and cook over medium heat until tender. Stir in the chicken broth, bacon and mashed beans and cook over medium heat until heated through. Season with salt and pepper.

Notes

I double this and freeze in individual portions.

Substitutions

Can substitute vegetable broth or water for the chicken broth. Homemade or canned broth can be used.
