Ingredients

drippings from roast (optional)
2 cup stock
4 Tbsp corn or potato starch
1/4 cup water

Directions

If starting with pan drippings, remove any meat and vegetables from your baking pan. Scrape up all the browned bits on the bottom and sides. Strain drippings into a measuring cup.

Add stock until you have 2 cups of liquid. Pour into a saucepan and bring to a simmer.

Make a slurry from the starch and water. Mix thorough to make sure there are no lumps and nothing stuck on the bottom.

Once your liquid is a simmer, stir your slurry again. Slowly add to your pot while stirring your liquid. Continue stirring until your gravy is thickened and glossy.

Season with salt and pepper to taste.

Notes

Cornstarch and potato starch are the best options for gravy. Avoid arrowroot and tapioca starches because they can get “stringy” and look artificial in gravy.

Cornstarch is more translucent than flour based sauces. Potato starch gravy is more opaque than cornstarch but less opaque than flour.

Starch sauces require less simmering than flour based sauces. Do not boil. Don’t overcook cornstarch based sauces or your gravy will lose some of its thickness.

Starch based gravy can be made ahead and gently reheated, but may loose some of it’s thickness.

Starch based sauces do not freeze well.

Substitutions

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.

16 oz So Delicious® Plain Cultured Coconut Milk
1 chipotle pepper in adobo
1 Tbsp lime juice
1/4 cup cilantro

Directions

1 Tbsp unseasoned rice vinegar
1 Tbsp sesame oil or olive oil
1 tsp ginger powder
1 Tbsp cane sugar

Ingredients

1 eggplant, peeled and cut into cubes
1 chopped onion
8 cloves garlic
3 cups water
1/3 cup tomato paste or tomato puree
1/3 cup olive oil
2 tsp salt
1 1/2 tsp black pepper

Directions

In a pot, bring water with eggplant, onion, and garlic to a light boil and let it simmer for 20 minutes. Then drain the vegetables, but save the water for later. Pour the cooked ingredients into a food processor or blender and blend until smooth. If the sauce gets too thick, you can use a couple of tablespoons of the flavored cooking water to get the consistency you want.

2 cups chopped red bell pepper
2 cups loose parsley leaves
10 cloves garlic
1/2 cup white wine vinegar
1/3 cup olive oil
1 1/2 tsp red pepper flakes
2 tsp salt
2 tsp dry oregano

Directions

Add all of the ingredients into a food processor or blender. Let it go until smooth, and voila! You’ve got chimichurri in a hurry!

Ingredients

12 lbs apples, peeled, cored, quartered, and treated to prevent browning
1/2 cup water or pastuerized apple juice/cider
3 cups granulated sugar (optional)
4 Tbsp bottled lemon juice or apple cider
canning jars, lids, and bands (optional)

Directions

Peel and core apples. Place in a large stainless steel saucepan/stockpot, adding water or juice to prevent sticking. Bring to a boil over medium-high heat. Reduce heat and simmer gently, stirring frequently until apples are softened (5 to 20 minutes, depending on variety and size.) Remove from heat and let cool slightly, about 5 minutes.

Puree apples, using either a food mill or food processor for smoother applesauce, or a potato masher for chunky applesauce. Return to saucepan.

Add sugar, if using, and lemon juice. Bring to a boil over medium-high heat, stirring frequently to prevent sticking. Remove from heat and allow to cool if you are going to freeze or eat within 3-5 days. Maintain a gentle boil over low heat if you are going to preserve in jars.

To preserve in glass jars:

Prepare boiling water canner. Heat jars, lids, and canning funnel (if used) in simmering water until ready for use. Do not boil. Set bands aside.

Ladle hot applesauce into hot jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.

Process jars in a boiling water canner for 20 minutes (pints and/or quarts) adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. If a seal is not achieved, either refrigerate and use immediately, or reprocess. (Bring applesauce to a rolling boil for 5 minutes, ladle into clean jars with new lids and process in bath as above.)

Ingredients

1 lb ground beef (80/20)
1 lb ground pork
1 cup white wine
4 cups tomato sauce
1 Tbsp salt
1/2 Tbsp black pepper
3 Tbsp olive oil
1/2 chopped onion
1/2 chopped carrot
2 cloves garlic, chopped

Directions

In a pot heat up the oil, then add the beef, pork, onions, garlic and carrots. This is the most important step for a good Bolognese. Let all of the ingredients cook very well to consume all of the natural juices. When the meat is nice and brown add the White Wine to dissolve the brown spots on the bottom of the pot.

Let it reduce for a minute or two then add the tomato sauce, salt and pepper. Bring it to a simmer and let it cook on low heat for approximately 30 minutes.

Today I served it on Brown Rice Fusilli Pasta!

This recipe makes 8 cups of sauce. You can save it in the fridge for up to a week or you can freeze it in ziplock bags and have it ready whenever you need it. This will come in handy as school starts in the upcoming weeks!

Ingredients

1 bunch asparagus
2 boiled red potatoes
2 chopped shallots
3 chopped garlic cloves
2 tsp salt
1 tsp black pepper
2 tsp olive oil (for shallots and garlic)
2 Tbsp olive oil
1/2 cup cold water
15 mint leaves

Directions

Blanch asparagus in boiling water for 2 minutes. Cool them off in an ice bath.

Sauté garlic and shallots in 2 tsp of olive oil for about 5 minutes at medium low heat. Make sure they don’t get any color.

Put everything in a blender.
Serve cold or at room temperature!

Ingredients

1 cup rice milk
salt
pepper
olive oil
2 tsp minced garlic
1/4 cup chopped onion
1 Tbsp nutritional yeast
1 can great northern beans

Directions

Saute garlic and onion in olive oil. Puree the beans in a food processor or blender. Add beans to garlic and onion. Stir constantly over medium heat. Add rice milk to whatever thickness you like. Add nutritional yeast, salt and pepper to taste.

Notes

We serve this over rice noodles and broccoli. We use homemade rice milk which is much thicker and creamier than Rice Dream.
