Ingredients

1/4 cup sorghum flour
1/4 cup potato starch
1/4-1/2 cup soda water

Directions

Mix the flours together.

Mix in enough cold soda water to make a thin batter.

Dip in anything you want (chicken strips, vergetables, fish). Fry in hot oil.

Ingredients

3 lb boneless country spare ribs
3 tsp kosher salt
1 1/2 tsp freshly ground pepper
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1/8 tsp paprika
1/2 tsp Italian seasoning
1/2 cup red wine or water

Directions

Coarsely grind meat.

Mix spices with wine (or water if grape or sulfite allergic). Pour evenly over meat and mix thoroughly. This can be done using the flat beater of the mixer on “Stir” for about 1 minute. Don’t overmix. This can be used as bulk sausage or stuffed into casings for links.

Ingredients

1 loaf firm bread
olive oil (optional)
seasoning of choice (optional)

Directions

Preheat oven to 300 °F. Cut bread into small cubes. Make them larger than the finished size you want to end up with.

Put bread cubes in a large roaster or jelly roll pan. They need not be in a single layer, but the thinner the layer, the faster they will toast. Toast in oven, stirring and turning every 15 minutes or so, until they are dried and starting to brown. The amount of time will depend on the size of the cubes and how spread out they are on the pan.

Use immediately or allow to cool and store airtight.

Notes

I generally use Italian or Sourdough bread for this. Any type of bread should work. My Gluten Free Sandwich Bread works well for this as a gluten free option.

This is the basis for My Sister’s Famous Holiday Stuffing.

I make seasoned croutons to top my BLT Pasta Salad. If you want seasoned croutons, coat bread cubes with olive oil and seasonings of choice before baking. Good choices are fresh pressed garlic or garlic powder, dried parsley, finely grated Parmesan cheese, Italian Seasoning, etc.

Directions

Heat a griddle or large non-stick pan over med-high heat. Pour 1/2 cup batter in pan and spread out with a spoon. Sprinkle on topping. Cook about 2 minutes and pour some oil around the edges and on top and cook another 2 minutes. Use a large flat spatula and flip over. Press down. Cook 2 more minutes until it looks cooked. Remove and serve immediately or keep warm while cooking the rest.

Notes

Any type of “dry” filling or even just chopped tomatoes. I like this with spicy potato filling.

These are made with leftover Dosai Bean and Rice Crepes or Idli Steamed Rice and Bean Dumplings batter.

Substitutions

To avoid milk, omit ghee.

Ingredients

flour tortillas or corn tortillas
pan spray

Directions

Use oven-safe bowls or small dishes. Pan spray, shove tortillas in, and bake at 375 °F until they start to brown (guessing 10-12 minutes, but honestly use my nose). Easy, and cuts out all the fat of restaurants that fry their taco salad bowls.

Notes

You can briefly (10 sec) microwave tortillas to make more pliable before forming in dish.

For a crispier bowl, pan spray the tortilla after putting in bowl. Don’t use too much or it will be too greasy.

Select any safe flour tortilla for this. If using corn tortillas, look for the largest ones you can find.

1 pkg firm silken tofu
1/4 cup mayonnaise
1 Tbsp stone-ground mustard
1 tsp salt
1/4 tsp pepper
1/4 tsp turmeric (for color)

Directions

Crumble the tofu with a fork. Add remaining ingredients and mix well.
