Recipe Information

Ingredients

1/2 cup long grain brown rice
4 cups water
2 Tbsp canola oil or other mild oil
1/2 tsp sea salt
4 Tbsp white sugar or other sweetener
2 tsp vanilla extract
4 Tbsp (heaping) rice protein powder
2 Tbsp sugar
1 tsp vanillla

Directions

Add 4 cups water, oil, salt, 4 Tbsp sugar and 2 tsp vanilla to lg saucepan. Add rice and stir occasionally while heating to simmer stage. Cover and simmer 2-4 hrs and let cool. I put it in the fridge overnight.

Once cooled, add in 2 batches to food processor or blender. With each batch include additional 2 cups water, 2 Tbsp sugar (or to your liking–my kiddo drinks it on the sweet side) and 1 tsp vanilla. Blend on puree and strain, repeat with second batch.

This rice milk will settle and needs to be shaken before using. Stores in fridge nicely up to 5 days.

Notes

I use Lundberg brand long grain brown rice.

Nutribiotic Vegan Rice Protein Powder states it is free from cross contamination and boasts 12 grams of protein per heaping Tbsp.

Very yummy smooth rice milk. Makes consistency like low fat milk. You may decrease water for thicker rice milk.

Save strained rice bits for a nice hot cereal!

Substitutions

Although high in protein from the added protein powder, this is an unfortified rice milk. It does not contain any significant calcium or vitamin D and is not nutritionally equivalent to cow’s milk or fortified rice milk.

Ingredients

1 cup sugar
1 cup water
Fruit of your choice

Directions

Bring sugar and water to boil and let cool.

Chop fruit and puree in blender until desired smoothness. (This recipe is delicious either chunky or completely smooth.) Add sugar syrup to reach desired sweetness. Freeze.

Scoop or shave into serving bowls. You can also freeze mixture into cups, and place a stick in the center to make popsicles.

Substitutions

Use whatever fruit is safe for you, but strawberries or a mix of strawberries and bananas is recommended.

Ingredients

1 qt lemon or limeade
1 lemon or lime
1 green apple
1 orange or tangerine
1 plum or pluot (optional)
1 peach (optional)
1 nectarine (optional)
1or 2 12 oz bottles/cans ginger ale

Directions

Pit/core all fruit and slice thinly. Place into a large container or pitcher and pour lemon/limeade over. Allow to macerate for 2-4 hrs in the refrigerator. Add ginger ale and serve.

Serve this in a nice pitcher or a punch bowl. The fruit can be served in the cup along with the sangria.

Notes

We make this for special occasions and it’s always a big hit with the kids. My kids love to just take a bowl of the macerated fruit slices to eat too.

Substitutions

Use whatever fruit is fresh and in season. In the winter I usually use some citrus (lemon/orange) plus apple and pear. For the summer, I use stone fruits like peach, plum and nectarine along with the citrus and apple.

We use either Simply Lemonade/Limeade or Odwalla Summertime Limeade. Any brand or variety will work.

We use either 365 Ginger Ale or Reed’s which are both free of corn syrup.

Mix dry ingredients throughly in a measuring cup. Pour hot water over mixture, mix throughly with a whisk or small hand mixer. Serve. Add marshmallows if desired.

Ingredients

2 1/2 cups cold coffee
1 1/2 cups dairy-free coffee creamer
3/4 cups sugar
chocolate syrup (optional)
ice

Directions

Combine all ingredients except ice in the blender and mix. Pour half into a pitcher and reserve. Add ice to the rest of the mixture in the blender and pulse until you reach the desired texture.

Repeat process with the reserved mixture.

Notes

Half of a batch fills two very large glasses.

Add 1 tsp of vanilla extract or use vanilla flavored creamer for a vanilla flavored drink.

Yes, this is a frappucino knock off.

Substitutions

You can substitute evaporated milk for the creamer if you can do dairy… You may be able to make it soy free and corn free by using a kosher for Passover whipped topping (Kineret) or coffee creamer (Rich’s or Kineret)

Ingredients

1 cup rice milk
pinch cinnamon
pinch nutmeg
dash vanilla
1-2 pinches xanthan gum
1 whole clove

Directions

Warm everything together except xanthan gum. Stir with a fork. Add xanthan gum, and warm again, mixing well. Bring to a small boil until it thickens (doesn’t thicken very much) and until the spices are well mixed throughout the mixture.

Pour into a coffee cup and chill for a bit.

Directions
