You would have to contact the company to ask about their pudding. I would guess that instant pudding would not hold up to being baked.

Hi Donna – you should be able to substitute applesauce for the egg. They might be a little more dense. If that’s the case, you increase the baking powder by 1/4 tsp.

It mixed easily, and hardened nicely.
My only complaint was that it was thicker than the regular icing that I use, and a bit harder to spread on the cake.

Michelle – instant pudding don’t set up properly with milk alternatives because they rely on the modified starch in the mix to bind with specific proteins in cow’s milk. This recipe calls for cook and serve and pudding mix. Cooked pudding mixes do set up with milk alternatives because they work by cooking the starch in the mixture to gelatinize.
